Palmetto Cheese Chicken and a Biscuit

Ingredients:
1.5 pounds chicken, cooked and large diced or
(3 cups cooked/leftover chicken)
1/3 Cup Oil or Butter
2/3 Cup Flour
4 Cup Chicken Stock
1 Cup Milk
1 pound Mixed Vegetables frozen (carrots, peas, corn, green beans)
6 oz. Palmetto Cheese, Original or Jalapeno
Salt and Pepper to taste
1 recipe Biscuit topping (below)

Directions:
Boil chicken in 5 cups of water. This can be used later for the stock. A whole chicken can be boiled and meat removed or you can use just chicken breast if you prefer. Turkey or chicken leftovers can also be used. Once the chicken is cooked, cut into large dice and set aside.
In a large saucepan or stockpot, melt butter and stir in flour. Cook flour and butter on medium heat for 2 minutes. Stir in chicken stock and milk and continue to cook on medium heat. Cook until mixture has thickened. Once the liquid has thickened, stir in diced chicken, vegetables and 6 ounces (1/2 tub) of Palmetto Cheese. Add salt and pepper to taste. Pour this mixture into a 9x13 baking dish. Proceed to make the biscuit topping.

Biscuit Topping:
Ingredients:
2 Cup Flour
2.5 Teaspoons Baking Powder
1/2 Tablespoon Sugar
1/4 Teaspoon Salt
1/2 Cup Butter, cut into small cubes
1/2 Cup Milk
6oz. Palmetto Cheese, Original or Jalapeno

Directions:
Stir together flour, baking powder, sugar, and salt. With a fork, cut in butter until the mixture becomes crumbly. Stir in milk and Palmetto Cheese just until all ingredients have combined. With a spoon or your fingers, evenly top the chicken mixure with the biscuit topping. Place into a 350 degree oven for 35-40 minutes or until biscuits have cooked thoroughly and mixture becomes bubbly.
