Buffalo Chicken CupsIngredients
1 - 13.8 oz pkg Pillsbury Pizza Crust (We used whole grain)
1 - 25.5 oz. pkg. Popcorn Chicken (We used the Target's Market Pantry brand)
1 - 12oz. tub Palmetto Cheese - Original, Jalapeno or Bacon
3/4 Cup Blue Cheese Dressing
1/4 Cup Buffalo Wing Sauce
Preheat the oven to 400 F. Grease an average sized muffin pan. Recipe yields 20 cups.
If the popcorn chicken pieces are large, cut the large pieces in half. Each bag will vary. In a large bowl, mix together the chicken, Palmetto Cheese, blue cheese dressing, and buffalo sauce. If you don't like spicy food, simply omit using the buffalo sauce. If you like spicy, use Palmetto Cheese with Jalapenos and buffalo sauce. Set aside mixture.
On a lightly floured counter, unroll the pizza crust and pull it out so it's approx. 10x13. You should be able to stretch it out with your hands or use a rolling pin.
Cut the dough into 20 squares (4 squares at the shortest width x 5 squares at the longest). Line muffin pans with one square of dough each. Top each dough square with chicken mixture to fill up the muffin cups.
Bake at 400 F until golden brown. Approximately 20 minutes. Remove from pans and serve.
