Not all desserts require loads of sugar. Sometimes all you need is a little bit of pimento cheese and some creativity. If you would like to submit a recipe you have come up with using our pimento cheese, please email it to: palmettocheese@sc.rr.com

Palmetto Pimento Cheese Cookies

Ingredients:
1 cup flour
1 cup Original or Jalapeno Palmetto Cheese
1/4 butter or margarine
1/2 cup pecans, chopped fine
1/4 tsp salt
Jam or preserves

Using a stand up mixer, combine flour and Palmetto Cheese and mix on medium for 60 seconds. Add butter and mix on medium speed until blended. In a food processor, grind pecans fine. Add pecans and salt to the cheese mixture and mix until combined. Wrap in plastic wrap and refrigerate for 2 hours. Dough must be chilled to work with. Once chilled, roll dough out on a floured surface to 1/8" thickness. With a round cookie cutter cut shapes into the dough. Place 1 teaspoon of filling on the middle of the dough and top with another piece of dough. This will create a sandwich, press edges to seal in the filling. Bake at 400F for 12-15 minutes until golden brown. Let cookies stand for 10 minutes before eating as the filling will be quite hot. Enjoy!
