Ingredients
- 3 cups cornflakes, crushed
- 3 tablespoons butter, melted
- 1 tsp dried chives, optional
- 1 (32 ounce) bag frozen diced potatoes
- 1/2 cup sour cream
- 1 (10.5-ounce) can cream of chicken soup
- 1 cup Palmetto Cheese, any variety
- 1 teaspoon garlic salt or regular salt
- 1/2 teaspoon ground black pepper
Make it a meal!: Add 2 cups cubed ham or 2 cups cooked ground beef to make this a hearty dinner casserole. Try topping with bacon, green onions, avocado, minced red onion, or more for different flavors!!

Instructions
- Preheat oven to 300 degrees Fahrenheit.
- Spray a (9-inch x 13-inch) casserole dish with nonstick cooking spray.
- In a small bowl stir together butter, crushed cornflakes, and parsley or chives.
- In a large bowl, stir together remaining ingredients(potatoes, sour cream, chicken soup, palmetto cheese, salt and pepper).
- Place potato mixture into prepared casserole dish and top with buttered cornflakes.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake another 30 minutes.
