1 large cauliflower head, broken apart and core removed (about 21 ounces)
½ to ¾ cup Palmetto Cheese, preferred variety
3 tablespoons sour cream
1 tablespoon chives or fresh chopped scallions
½ teaspoon freshly ground pepper
½ teaspoon salt or to taste
3 chopped pieces of bacon, cooked until crispy

Instructions

Steam cauliflower over one cup of water until tender and allow water to drain off.
Place in large bowl and process with emulsion blender until smooth.
Add Palmetto Cheese, sour cream, chives or scallions, salt and pepper.
Stir until well blended and cheese has melted.
Garnish with chopped, crispy bacon.
