Ingredients
- 6 medium size red potatoes (about 2 pounds)
- 1 (11-ounce) container Palmetto Pimento Cheese or Palmetto Bacon Pimento Cheese
- 1/2 cup cooked and chopped bacon
- 1/4 cup sour cream
- 1/4 cup sliced green onions
- 2 tablespoons apple cider vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- Additional chopped bacon and sliced green onion for garnish, if desired
Instructions
- Place potatoes into a medium or large pot. Add water to cover and salt to taste. Bring to a boil, reduce to a simmer, and cook for 30 minutes or until tender when pierced with a fork. Drain and let cool, about 30 minutes. Then cut into 1/2-inch/bitesize pieces.
- Meanwhile, in a large bowl, mix together all remaining ingredients (except optional garnish). Add cut potatoes and toss to combine.
- Garnish with additional bacon and green onion if desired
