Palmetto Cheese Shrimp and Grits

Ingredients

  • 1 (11-ounce) container Palmetto Original Pimento Cheese
  • 4 cups cooked and warmed grits or soft polenta
  • 4 tablespoons butter
  • 3/4 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 2 cloves garlic, finely chopped
  • 2 tablespoons flour
  • 1 (14.5-ounce) can petite diced tomatoes
  • 1/2 teaspoon dried thyme
  • 1 1/2 pound medium to large shrimp, peeled and deveined
  • 1/4 cup white wine, optional
  • 1 tablespoon tomato paste
  • 1/3 cup heavy cream
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon kosher salt, or more to taste
  • 2 tablespoons chopped fresh parsley, optional
  • 1/4 cup grated parmesan cheese

Instructions

  1. Add butter to a large skillet over medium heat.
  2. Once the butter is melted, add onion, pepper, and garlic and cook until softened, about 3 minutes.
  3. Sprinkle flour over onions and pepper, and stir for about 1 minute.
  4. Add diced tomato and thyme, cook 1 to 2 minutes or until bubbling.
  5. Next add shrimp to the skillet and stir constantly until sauce bubbles, about 2 minutes.
  6. Add white wine and bring to a simmer, about 1 minute.
  7. Add tomato paste, cream, Worcestershire and salt.
  8. Stir until fully combined and remove from heat.
  9. In a medium bowl stir together 1/2 container of the pimento cheese and the heated grits. Place grits onto plates and top with cooked shrimp and sauce.
  10. To finish, add a 1/4 cup scoop of pimento cheese and a sprinkle of parsley and parmesan onto each plate.
