Palmetto Cheese Shrimp and Grits
Ingredients
- 1 (11-ounce) container Palmetto Original Pimento Cheese
- 4 cups cooked and warmed grits or soft polenta
- 4 tablespoons butter
- 3/4 cup chopped onion
- 1/2 cup chopped green bell pepper
- 2 cloves garlic, finely chopped
- 2 tablespoons flour
- 1 (14.5-ounce) can petite diced tomatoes
- 1/2 teaspoon dried thyme
- 1 1/2 pound medium to large shrimp, peeled and deveined
- 1/4 cup white wine, optional
- 1 tablespoon tomato paste
- 1/3 cup heavy cream
- 2 tablespoons Worcestershire sauce
- 1 teaspoon kosher salt, or more to taste
- 2 tablespoons chopped fresh parsley, optional
- 1/4 cup grated parmesan cheese

Instructions
- Add butter to a large skillet over medium heat.
- Once the butter is melted, add onion, pepper, and garlic and cook until softened, about 3 minutes.
- Sprinkle flour over onions and pepper, and stir for about 1 minute.
- Add diced tomato and thyme, cook 1 to 2 minutes or until bubbling.
- Next add shrimp to the skillet and stir constantly until sauce bubbles, about 2 minutes.
- Add white wine and bring to a simmer, about 1 minute.
- Add tomato paste, cream, Worcestershire and salt.
- Stir until fully combined and remove from heat.
- In a medium bowl stir together 1/2 container of the pimento cheese and the heated grits. Place grits onto plates and top with cooked shrimp and sauce.
- To finish, add a 1/4 cup scoop of pimento cheese and a sprinkle of parsley and parmesan onto each plate.
