Palmetto Tomato Pie

Ingredients
- 1 store bought pie crust
- 3 medium tomatoes(about 1.5 pounds), sliced 1/4-inch thick
- 1/4 teaspoon iodized salt
- 1 (11-ounce) container Palmetto Cheese
- 1/2 cup sautéed onions (about 1 small onion)
- 1/2 cup cooked and crumbled bacon
- 1/4 teaspoon ground black pepper
Tip: For a pretty presentation, top pie with cherry tomatoes that have be halved, or
chopped herbs such as basil, thyme leaves, or chopped parsley.
Instructions
- Heat oven to 425F.
- Press pie dough into a 9-inch pie pan. Prick the bottom of the dough lightly all over with a fork.
- Bake for 10-12 minutes. Remove from oven and set aside.
- Turn oven to down to 350F.
- Meanwhile, place sliced tomatoes in a single layer onto a baking sheet lined with paper towels. Sprinkle tomatoes with salt and cover with more paper towels, layer more
- tomatoes and salt. Set aside for 20 minutes.
- Spread Palmetto Cheese into the pie crust.
- Add half the sautéed onions, half the bacon, and one layer of tomatoes. Then add remaining sautéed onions, bacon, and remaining tomatoes.
- Sprinkle with pepper.
- Bake pie for 40-45 minutes.
- Let cool 10 minutes before serving.
