Ingredients
- 11 oz Palmetto Cheese - Original, Jalapeno, Pepper Jack or Bacon
- 1 cup sharp grated Cheddar Cheese
- 8 oz. Cream Cheese
- 3/4 cup Craisin’s, chopped
- 1/2 chopped pecans
“Monster Materials”
- 1 pkg Plastic eyes (we purchased at Michaels and they were originally used for decorating cupcakes)
- 1/2 Red Pepper
- 1 Cucumber
- 1 pkg Alfalfa Sprouts

Instructions
- In a mixing bowl, combine Palmetto Cheese, grated cheddar and cream cheese.
- Mix in 1/2 cup chopped Craisins into the cheese.
- Form a ball (make as big or small as you choose).
- On a plate or dish combine the remaining chopped Craisins and pecans.
- Roll the ball in the mixture covering all sides.
- Transfer to a serving plate.
- To transform your cheese ball into a monster, cut one end off of a cucumber. Cut that end in half and place in front to make the feet.
MOUTH
- To make the mouth, cut a red pepper in half and remove the seeds. You can cut the mouth out with a pairing knife. Stick the eyes in the top of the cheese ball and lightly press the mouth into the cheese ball.
- Tip: use a toothpick and draw your shape on the pepper before you cut. That way you have a line to follow. You can make the mouth whatever shape you like. There is no wrong way to do this step, so have fun!
