Ingredients
- 1 Avocado, cut in half and pit removed
- Palmetto Cheese - Original, Jalapeno, Pepper Jack or Bacon
We used Palmetto Cheese with Bacon on our avocados, but any variety will work. Same goes with the toppings. We have plenty of tomatoes and green peppers in the garden, so that's what we used on top of the pimento cheese. Olives, jalapenos, bacon crumbles and just about any vegetable that you want to use will take your avocado to the next level of deliciousness. Just make sure to cut the vegetable thin or small enough that it will bake fairly quick in the oven.

Instructions
- Preheat oven to 400F.
- After you have cut the avocado in half and removed the pit, take a small slice from the bottom of the avocado to keep it from wobbling around.
- Fill each half with Palmetto Cheese. The amount is to your liking and will depend on the size of your avocado, but 3 Tablespoons filled ours nicely. Sprinkle with Parmesan cheese, green peppers and the sliced Roma tomatoes. Place in a baking dish or on a sheet pan and bake in a 400F oven for approximately 15 minutes.
- These are a great side dish for a cookout or have one with a salad for lunch or dinner.
