Pimento Cheese Egg Muffins

Ingredients

  • 2 cups cooked and crumbled breakfast sausage*
  • 8 large eggs, beaten
  • 1 cup Palmetto Pimento Cheese with Bacon
  • 1 tablespoon dried chives
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon freshly ground black pepper

Pimento Cheese Egg Muffins
Place any leftovers into zip top baggies and save for up to one week.
To reheat, microwave for 30 seconds or until warm.

2 Egg Muffins

Instructions

  1. Preheat oven to 300F.
  2. Spray a cupcake pan generously with nonstick cooking spray.
  3. In a large bowl, whisk together all ingredients, except sausage.
  4. Divide sausage evenly into the 12 holes of a cupcake pan.
  5. Pour egg mixture over.
  6. Bake for 20 to 25 minutes or until set.
  7. Let cool 5 minutes, and then using a butter knife, gently remove from cupcake pan. Serve warm.
  8. *optionally you can make these with 2 cups cooked and chopped bacon.
