Ingredients
- 8.5oz pkg. "Jiffy" Corn Muffin Mix
- 1 egg
- 1/3 c Milk
- 1/2 c Palmetto Cheese - Original, Jalapeno, Pepper Jack or Bacon
- 12 Cocktail Smokies (each cut in half)

Instructions
- Preheat oven to 400F
- In a mixing bowl, combine corn muffin mix, egg and milk. Stir to combine.
- Add Palmetto Cheese and stir, but do not over mix.
- Grease a mini muffin pan.
- Spoon a Tablespoon of batter into each section.
- Top each with a Cocktail Smokie half and lightly press into the batter.
- Bake at 400F for 12 minutes or until the muffins are golden brown.
- Remove from the pan and top with more Palmetto Cheese.
- Serve with hot dog condiments if desired.
