Bacon Wrapped Palmetto Cheese Jalapenos

Ingredients

  • 6 large jalapeños, cut in half lengthwise, and seeds removed
  • 1/2 cup Palmetto Cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon chopped green onion or 1 teaspoon dried chives, optional
  • 12 slices Oscar Meyer center cut bacon, or similar thinly cut bacon
  • 1/2 teaspoon paprika or smoked paprika

Instructions

  1. In a small bowl mix together pimento cheese, cheddar cheese, and green onion.
  2. Divide cheese evenly among the halved jalapeños, spreading to fill the length of the pepper. Wrap each pepper with bacon and place onto a plate.
  3. Sprinkle with paprika and refrigerate until ready to grill.
  4. Heat a grill to medium heat.
  5. Place peppers, cheese side down, on hot side of grill for 4 minutes.
  6. Flip over and move to cold side of the grill, continue to cook for 10 minutes or until bacon is crisp. Remove to a plate and serve.
  7. Oven method: Heat an oven to 350 degrees Fahrenheit.
  8. Place peppers cheese side down onto a parchment lined sheet pan.
  9. Bake for 15 minutes, turning over halfway through baking time.
