Cheesy Jalapeno Corn Fritters

Ingredients
- 3 cups frozen corn kernels
- 3 tablespoons minced fresh white onion
- 1 (11-ounce) container Palmetto Cheese with Jalapenos
- 2 cups Bisquick biscuit mix
- 1/3 cup milk
- 2 eggs
- Spray Oil or Butter for pan frying
- Sour cream, as desired, optional
- Sliced Green Onions or Chopped Parsley, for garnish
Makes about 32 Fritters
Instructions
- In a medium to large bowl mix together corn, onion, pimento cheese, bisquick, milk, and eggs.
- Place a large nonstick or cast iron skillet over medium-low heat.
- Once hot add spray oil or butter to the pan, and 2 tablespoons of corn mixture and let cook for 3 to 4 minutes, flip and continue cooking 3 to 4 more minutes.
- Remove from pan when browned and cooked through.
- Serve with sour cream and green onions or parsley.
