Bacon Stuffed Artichoke Bottoms

Ingredients

  • 16 large canned Artichoke Bottoms, patted dry (these can be found online or at your local grocery store)
  • 1 (11-ounce) container Palmetto Cheese
  • 1 cup chopped cooked Bacon
  • 1/4 cup Italian breadcrumbs
  • 1/4 cup chopped fresh Parsley, optional, plus more for garnish
  • 1 tablespoon dried chives
  • 1 teaspoon garlic salt
  • 1/2 teaspoon ground black pepper, plus more for garnish

Bacon Stuffed Artichoke Bottoms
Makes 16 appetizer servings

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl stir together pimento cheese, bacon, breadcrumbs, parsley, chives, salt, and pepper.
  3. Spoon about 3 tablespoons cheese mixture into each artichoke bottom.
  4. Place onto a small parchment lined sheet tray and bake 20 minutes or until browned and heated through.
  5. Serve with additional parsley and cracked black pepper, if desired.
