Ingredients

  • 3 cups frozen corn kernels
  • 3 tablespoons minced fresh white onion
  • 1 (11-ounce) container Palmetto Cheese with Jalapenos
  • 2 cups Bisquick biscuit mix
  • 1/3 cup milk
  • 2 eggs
  • Spray Oil or Butter for pan frying
  • Sour cream, as desired, optional
  • Sliced Green Onions or Chopped Parsley, for garnish

Cheesy Jalapeno Corn Fritters
Makes about 32 Fritters

Instructions

  1. In a medium to large bowl mix together corn, onion, pimento cheese, bisquick, milk, and eggs.
  2. Place a large nonstick or cast iron skillet over medium-low heat.
  3. Once hot add spray oil or butter to the pan, and 2 tablespoons of corn mixture and let cook for 3 to 4 minutes, flip and continue cooking 3 to 4 more minutes.
  4. Remove from pan when browned and cooked through.
  5. Serve with sour cream and green onions or parsley.
