Jalapeno Bacon Log
Ingredients
- 11 oz. Palmetto Cheese with Jalapeños
- 11 oz. Pepper Jack Palmetto Cheese
- 1 cup shredded sharp cheddar cheese
- 1 tablespoon finely chopped fresh jalapeño, optional
- 1 tablespoon dried chives
- 8 slices thick cut bacon(about 3/4 pound), chopped into 1/4-inch squares
- Crackers, Mini Sweet Peppers, and Celery Sticks, to serve, optional
Instructions
- In a medium bowl, using an electric hand mixer, blend Palmetto Cheese, cheddar cheese, jalapeño, and chives until smooth and combined.
- Form into a log shape and put into freezer for 1 hour or until firmed up.
- In a small skillet over medium heat, cook chopped bacon until crispy, stirring frequently, about 30 minutes.
- Remove from oil onto a paper towel lined plate to drain.
- Place cheese log onto a platter and press the bacon bits onto the log until covered.
- Let sit out for 30 minutes before serving.
- Serve with crackers, mini sweet peppers, and celery sticks.
