Pimento Cheese Egg Muffins
Ingredients
- 2 cups cooked and crumbled breakfast sausage*
- 8 large eggs, beaten
- 1 cup Palmetto Pimento Cheese with Bacon
- 1 tablespoon dried chives
- 1/2 teaspoon garlic salt
- 1/4 teaspoon freshly ground black pepper
Place any leftovers into zip top baggies and save for up to one week.
To reheat, microwave for 30 seconds or until warm.

2 Egg Muffins
Instructions
- Preheat oven to 300F.
- Spray a cupcake pan generously with nonstick cooking spray.
- In a large bowl, whisk together all ingredients, except sausage.
- Divide sausage evenly into the 12 holes of a cupcake pan.
- Pour egg mixture over.
- Bake for 20 to 25 minutes or until set.
- Let cool 5 minutes, and then using a butter knife, gently remove from cupcake pan. Serve warm.
- *optionally you can make these with 2 cups cooked and chopped bacon.
