Bacon Stuffed Artichoke Bottoms

Ingredients
- 16 large canned Artichoke Bottoms, patted dry (these can be found online or at your local grocery store)
- 1 (11-ounce) container Palmetto Cheese
- 1 cup chopped cooked Bacon
- 1/4 cup Italian breadcrumbs
- 1/4 cup chopped fresh Parsley, optional, plus more for garnish
- 1 tablespoon dried chives
- 1 teaspoon garlic salt
- 1/2 teaspoon ground black pepper, plus more for garnish
Makes 16 appetizer servings
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a medium bowl stir together pimento cheese, bacon, breadcrumbs, parsley, chives, salt, and pepper.
- Spoon about 3 tablespoons cheese mixture into each artichoke bottom.
- Place onto a small parchment lined sheet tray and bake 20 minutes or until browned and heated through.
- Serve with additional parsley and cracked black pepper, if desired.
