Bourbon Pecan Cheese Log
Ingredients
- 2 cups pecans, chopped
- 2 Tbsp butter
- 3 Tbsp brown sugar
- 4 fl. oz. bourbon
- 11 oz. Palmetto Cheese
- 8 oz. cream cheese

Instructions
- Melt butter in a saute pan over medium heat. Add chopped pecans.
- Stir until they give off a toasty smell. Roughly 1-2 minutes.
- Stir in brown sugar. Before the next step, have a lighter or barbecue match ready.
- Add bourbon, remove from heat and light the side of the pan to make a tall flame. If you have an electric range, you will likely need an external flame.
- Vigorously shake the pan until the flame extinguishes.
- Pour pecans onto a dinner plate and set aside to cool.
- In a mixing bowl, combine cream cheese, Palmetto Cheese and a 1/2 cup of the cooled pecans. Refrigerate for 30 minutes to firm up.
- Shape cooled cheese mixture into a log and roll into the pecans. Cover all sides with the pecans. Place on a serving tray and serve with pretzels, apples and crackers.
