Palmetto Cheese Stuffed Meatloaf

Ingredients
- 3 lb. Ground Beef
- 1 and 1/2 cup Quick Oats
- 1/2 White Onion, diced
- 2 Eggs
- 2 Tbsp Minced Garlic
- 3/4 cup Barbecue Sauce
- 1 cup Milk
- 2 tsp Salt
- 2 tsp Black Pepper
- 2 tsp Garlic Powder
- 2 - 11oz Palmetto Cheese, any variety
- 1 lb Bacon
- Barbecue rub seasoning, optional
- 1/2 cup Barbecue Sauce
Instructions
- In a mixing bowl, combine ground beef, quick oats, onion, eggs, minced garlic, barbecue sauce, milk, salt, pepper and garlic powder. Mix until combined.
- Line a 9”x5” loaf pan with saran wrap with an extra six inches on each side to be able to wrap up the loaf.
- Fill the loaf pan with half of the meat mixture and press down until it’s spread out evenly.
- Add Palmetto Cheese to the center of the meat leaving at least an 1-1/2 inches on all sides.
- Top with the remaining meat mixture and press gently into the pan to cover the pimento cheese on all sides.
- Lift up the plastic wrap to cover the meatloaf and freeze for two hours to firm it up.
- Remove from the freezer and remove the plastic wrap. Place on a sheet pan or foil lined rack for your grill.
- Wrap the loaf in bacon, making sure the ends are tucked under the meatloaf.
- Sprinkle with your favorite barbecue rub(optional).
- Place on the grill or a 300F oven for an hour and a half or until your meatloaf reaches an internal temperature of 165F.
- In the last 20 minutes, brush with 1/2 cup of barbecue sauce.
- Pull it off the grill and let rest for 10 minutes. Slice and serve!
